Humans have traditionally eaten both meat and vegetables, but meat consumption has increased dramatically. According to the United Nations' Food and Agriculture Organization (FAO), global meat demand has risen by over 500 percent in the past 50 years. Meanwhile, scientists in the United States and China are working on creating natural "meaty" flavors from mushrooms to enhance plant-based foods. They believe that natural flavors are healthier and more acceptable to consumers.
